The Love me, love you Shiraz comes from the Balhannah area of the Adelaide Hills. Balhannah experiences very cool nights which are optimal for slow, even ripening. The 2016 Shiraz was harvested mid March. The wine was fermented with indigenous yeast. 30% whole bunch, plunged just twice a day, pressed off after 18 days on skins and maturated in French oak barrels, of which 20 % were new. While the wine is resting in barrel in through winter I leave them to their own devices, I let them be to hibernate. I racked the barrels to tank in October, when they seemed to have come into their own, let them mellow out in tank for a while then bottled in November. I don't filter the Shiraz so you may notice some special bits of love in the bottom of the bottle!
