The Love me, love you Shiraz comes from the Adelaide Hills. 2017 was a vintage which started looking textbook. Wet weather through the later ripening period made it a nail biting time. These grapes were tended wonderfully and ripened absolutely beautifully despite the challenging conditions. The Shiraz was harvested toward the end of April. The wine was fermented with indigenous yeast. 30% whole bunch, plunged just twice a day, pressed off after 16 days on skins and maturated in French oak barrels, of which 30% were new. The wine seemed happy to sit and hibernate through winter and into late spring. When I tasted the barrels in November they looked complete, happy and ready to move into their bottles. I racked the barrels to tank in late November with no adds and bottled in Mid December with a touch of Sulphur. I don't filter the Shiraz so you may notice some special bits of love in the bottom of the bottle!
