Grapes are from the Deanery vineyard in Balhannah - Adelaide Hills. The ferment is pressed to oak when all the sugar is used up. About 30% of the oak is new French hogsheads. The wine, as always walks the line between plush and juicy and structured and serious. There is a subtle flavour that I find every year that reminds me a bit of salty delicous Dutch Licorice coins, or maybe very mild aniseed. I really like this lovely little block, it is called the Bull Paddock, I have worked with these grapes for longer than Charlotte Dalton Wines has been around, in my previous employment as a consultant winemaker. I love it, each row is marked by a Mr Lincoln red rose bush - they were my Mums favourites, which feels like a cool coincidence.
