Ærkeengel - Danish for Archangel. My beautiful Mum was half Danish. Danes are wonderful. This wine started as an experiment to see what would happen with more time in oak, with more solids. When the above wine is bottled I hold back a small amount for a further 6 months. The lees from the Love me Love you barrels are added to these barrels. The wine undergoes full MLF. Unfined and unfiltered. Sulphured prior to bottling. No other adds.

This is the last vintage of Ærkeengel, my flag ship Semillon, Love you love me, is desperate for all the Semillon it can get, meaning the experiment ends here. For now.
